Summertime Mock-Tails!

If you haven’t noticed, summer is upon us – whats up 100 degree weather and mid-day sun showers?! Honestly though – here in South Florida… it’s always summa time. However, this is my first summer by the pool eating clean and without that pretty drink, and honestly, it’s “mehh” at best. Don’t get me wrong – a drink at dinner is always welcome; but when I am by the pool, it’s like an all day event and who wants just one drink? So enter my favorite summer “mock-tails” – which, you could totally add some Vodka to if you’re feeling wild!



So first you need some fancy cups. I took my tush to Homegoods and got some pretty cups – there is something about a pretty cup that makes me finish my drink. My husband will confirm that I finish nothing that is served to me in a can. I’m also a cup hoarder – so that could also have something to do with my trip to Homegoods… but I digress.



So most of my light “mock-tails” have a base of coconut water – it has a sweet, nutty flavor and it’s hydrating while you’re out in the sun. TIP: Look for pink coconut water – that’s going to be the best flavor for coconut water. It looks me a but of time to appreciate coconut water, and I started with the clear stuff and worked my way up to that good-good. Try different brands – don’t give up on the first brand you try!  You could also use plain water or sparkling water, if that’s your thhaang.



Here are some combos that I muddle, add to my glass, add ice and top with coconut water:

Blueberry & Ginger

Cherry & Lime

Cucumber & Mint

Strawberry & Lemon

Watermelon & Basil

Watermelon & Mint



There are a ton of mixtures that you can make and experiment with! These are super refreshing when you’re trying to beat the summer heat. You won’t feel like you’re missing out, and you’ll be glad you did when you can go round two the next day!

Watermelon Coconut Mocktail


  • 3 - 4 Chunks of Juicy Watermelon
  • 3 Mint Leaves
  • 4 Ounces Coconut Water
  • Ice


  1. Muddle the Mint and Watermelon together very well. Fill your glass with Ice. Pour the muddled mixture - juice and all in the glass. Top with coconut water. Garnish with a slice of watermelon and a mint leaf.
