Yam & Banana Breakfast Mash with Maple Spiced Walnuts

One of the things I have noticed with clean eaters and WHOLE30-ers is eggs for breakfast… like how many eggs can one person have? For me – I don’t get sick of eggs for breakfast but I can totally get how one can be over eggs. Welp – here we go an eggless , delicious breakfast that you can make ahead.

 

 

I’m usually thinking ahead to my next meal – just me? So at dinner – I am already dreaming of breakfast which is how this recipe started. I had a few brown bananas and an extra yam. Usually my go-to with brown bananas is… BANANA BREAD! Yea I know – totally original. However, I was in the middle of a Whole30 so banana bread wasn’t in the cards… and so this simple recipe was born!

 

 

I usually make sweet potato or yams for dinner the night before and then throw in an extra for my breakfast the next day. If you do it this way – just remove the skin and mash up before you put in a container. Trust me it reheats so well!

 

I also top this recipe off with my Maple Spiced Walnuts – these are not Whole30 – sorrryyyy. BUT! Once you’re done with your Whole30, make these ASAP!

Yam & Banana Breakfast Mash with Maple Spiced Walnuts

Ingredients

  • 1 Cooked & Peeled Yam
  • ½ Tsp. Ghee
  • 1 Brown Banana
  • 1 Tbsp. Coconut Milk
  • 1 Tsp. Cinnamon
  • ½ Tsp. Vanilla Extract
  • Pinch of Salt

Instructions

  1. Mash up the hot and peeled yam with the ghee so it melts into the yam. * If you're making a big batch I would use the stand mixer with the whip attachment.
  2. Add coconut milk a tablespoon at a time until if you a smooth consistency.
  3. Mash up the brown Banana with the Cinnamon, Vanilla Extract and Pinch of Salt.
  4. Once it's smooth add the banana mixture to the yam mixture and mix well.

Recipe Notes

Top with these Maple Spiced Nuts or even your favorite nut butter. You can also make ahead for the week and warm up in the microwave!
